Happy 2nd Anniversary

Today is Brian and my 2nd anniversary. It has been two great years. I have heard many people say their first few years of marriage were really hard, but Brian and I sure have enjoyed our first couple years. It is true when they say opposites attract. We share a lot of the same interests, but when it comes to personality, we couter-balance each other.

Stucki Noodles

Upon Ashlee’s request, the recipe for Stucki noodles is listed below. My mom gave me this recipe after Brian decided it was his favorite homemade meal. It is better than any pasta I have had at any of the restaurants.
12 oz pkg. rotini pasta cooked according to pkg.
2 Tbsp. butter
2 skinless/boneless chicken breast halves, sliced 1/2 inch thick
3 cloves of garlic, minced
1 bunch green onions, chopped
2 Tbsp. Creole seasoning (The best creole is at Wal-Mart)
1/2 tsp ground pepper
1/2 tsp red pepper (cayenne)
8 oz. heavy cream
1 green bell pepper, julienned
1 red bell pepper, julienned
1/2 cup parmesan cheese, fresh grated
Preperation: Cook pasta according to pkg.
Melt butter in large skillet over medium heat. add
chicken; cook, stirring frequently until browned about 6-8 min.
Add garlic, onions, Creole seasoning and black and red pepper.
Add bell peppers, stir to combine. (I leave these out and let people
put them in after it is cooked so they are more crisp. Either way is good)
Cover and cook for 5 min. Uncover, stir in cream and let simmer another 2 min.
Remove sauce from heat. Stir in cooked pasta.
Add Parmesan cheese and serve immediately.
Hope whoever tries it loves it.

I was doing some scrapbooking of some pictures for Brian and my anniversary coming up and found the picture below. The first thing that popped in my head was the game on Sesame Street, which goes:
One of these things is not like the others,
One of these things just doesn’t belong,
Can you tell which thing is not like the others
By the time I finish my song?
So who can tell beside the white dress what doesn’t belong?
(And I was even wearing 4 inch heels)
Oceanside Fun

This last week our family was able to enjoy the cooler weather of Oceanside. It was nice to get away from the heat and have the ocean right outside of our window. Cole did really well for only being 5 weeks old and having us throw him off his schedule. I really enjoyed it. Here are a few pictures from the trip:

This is for Crystal. For some reason she finds my posts to be interesting enough to tag me. I added a little explaination to each answer so here it goes:
4 jobs I have held
1. Janitor (at Clark County Credit Union- one of my funnest jobs. I got to work with my cousin Chad Shirley and his friend Matt
Jorgenson. I think we ended up goofing off more than cleaned)
2. Physical therapy assistant (I helped people out in the gym with there programs)
3. Legal Assistant/Case Manager (for five long years- Tingey and Tingey Law Firm and the Richard Harris Law Firm)
4. Hairstylist (rented my own station and worked at Sport Clips)
4 Movies I can watch over and over
1. Dumb and Dumber (I know this is a stupid humor movie but boy does it make me laugh)
2. Family videos (My family thinks I watch these way too often)
3. Rigoletto (it has a great moral and really good music)
4. In reality, almost any good movie, I am not too picky.
4 Places I’ve lived
1. Salt Lake City (for four years while my dad went to University of Utah)
2. Glendale, California (while my dad went to USC and we had seven people living in a two bedroom apartment)
3. a lot of apartments in Las Vegas
4. in the Don Tingey westwind house (yep, with all the scorpions)
4 TV shows I enjoy
1. The Office (who wouldn’t)
2. Discovery HD shows (it is amazing the views people can catch)
3. American Chopper (I know, I know, but I enjoy watching this with my husband)
4. Any Red Sox game (or any Yankee games, to make sure they lose- go red sox)
4 Places I have been on Vacation
1. Hawaii (my first time on a plane about three years ago)
2. Boston-as well as the rest of New England (Brian took me and I loved it. The people are great and the history is fun to see)
3. Oceanside(where I am at right now)
4. San Francisco (where Brian and I got engaged)
4 of my favorite dishes
1. Beef and Peapods on rice (It tastes a lot better than it sounds)
2. Hawaiin Haystacks (so many different flavors all put together, so yummy)
3. Almost all mexican food (How can you not)
4. Stucki Noodles (or Cajun Chicken Pasta- the best pasta recipe in the world)
4 Websites I visit often
1. All the different blogs I can find
2. baby center (boy am I learning a lot)
3. Brian’s Photo Blog (he has a talent for taking photos and I have a talent for looking at them- hard talent I know)
4. Halloween websites (I am getting prepared extremely early for a halloween party I am so excited to be throwing this year)
4 Places I would rather be
1. I am enjoying Oceanside too much to want to be anywhere else right now.

Learning so Fast

We put Cole under the floor mobile the other day and he was already playing with all the things above him. It was more of a waving his arms around and hitting the animals, but it was entertaining. He did at one point, look and stare at himself in the little attached mirror. Here are a few pictures:
